Flavoured Meringues

We all love meringues – meringues kisses, nest, pavlova and Eton mess too – the crispy outside and the delicious marshmallow inside. They are easy to make and take about 10 min to make plus baking. They can be made in advance and stored in airtight container for about 10 days. If they last that long!

Ingredients: 3 egg whites (approx.) 120g

                    175 g caster sugar

                     pinch of salt

                      2 tbsp of freeze dried fruit powder of your choice

Preheat your oven 100’C and line your tray with baking paper.

Whisk your egg whites on full speed with pinch of salt until it forms stiff peaks. Whisk in the sugar, spoon by spoon to get a smooth, stiff and glossy peaks without feeling gritty sugar between your fingers. When ready fold in the freeze dried fruit.

Pipe your meringues on to a baking paper and bake in the oven for 45 minutes until the meringue basis come off the baking paper clean.
