Vegan friendly Raspberry Ice Pops

Ice pops, vegan, cashew nuts, coconut milk, freeze dried raspberries

Vegan friendly cashew and coconut based Ice Pops beautifully decorated with Vera Miklas freeze dried raspberries and dark chocolate

Ingredients:

  • 50g cashews
  • 1tbsp Agave syrup
  • 1tsp vanilla essence
  • 1/4 tin of coconut milk
  • 30g melted vegan white chocolate
  • 1tbsp Vera Miklas freeze dried raspberries
  • 1tbsp raspberry syrup
  • 10g melted dark chocolate

 

  • Ice pop molds, the ones in picture are large magnum like molds bought from amazon 

 

Method:

  1. Blend the first 5 ingredients in a food processor or Nutribullet
  2. Fill each of the four molds by half with the mix, divide up the raspberry syrup between the four and top off with the rest of the cashew cream mix.
  3. Now sprinkle some crushed freeze dried raspberries on top and freeze for about two hours until set.
  4. When set, melt the dark chocolate and drizzle the ice pops with the chocolate.
