Ingredients

- 1/2 cup dried mango
- 1tsp mint
- 2 tbsp oil
- Juice of 1/2 lemon
- 1tpsp rice vinegar
- 2tbsp brown sugar
- 2 tbsp sriracha mayo
- 1/2 cup water
- 1 tsp turmeric
- 4 cloves garlic
- 300g extra firm tofu
- Coriander leaves for sprinkling
Instructions

- Blend all ingredients in a blender until smooth and marinate tofu for at least two hours or overnight.
- Put on skewers and place under the grill for 15 minutes on each side.
- Serve with rice or as a starter on its own.
